A Fun Friday


Aedyn and I made "1-2-3 Almond Butter Cookies" for the nice neighbors who brought us pizza last week.

(adapted from a Peanut Butter Cookie recipie)

1 C. almond butter or peanut butter
1 C. sugar
1 egg

I tossed in some chocolate chips. Almost always a good idea.

The twin neighbor boys, Spencer and Samuel, brought their mom to play in the afternoon sun.

I have a question, since I am so challenged in the kitchen. Yours is the 2nd blog I read to post this recipe, like in the same week. Both of you are so intuitive in the kitchen, it didn't dawn on you to provide baking instructions (temp and time)...so I'm asking you b/c I feel a little less stupid b/c I know you love me. :) I really want to try these...I Think I can handle it :)

350 for the temp. Almost always good for baked goods.

For dough balls that are about 1 inch across, I baked these for 9-11 min. I set the timer for nine and then watched them. they were crisp outside and soft inside.

Let your cookie sheet cool down between uses or the dough starts to melt and spread.

Cool cookies on the cookie sheet for a about 2 minutes than on a cooling rack. This keeps them from sticking to the cookie sheet. If you don't have a cooling rack, just lift the cookies with a spatula after the 2 minutes and set them back down on the cookie sheet.

A note: I had about 3/4 of almond butter left in the jar so that's what I used. Just need equal amount of sugar and I used a med. size egg because our chickens lay different sizes.

I read a recipe that says you can use any kind of nut butter, and either brown or white sugar.
